The taste of spring’s first blooms

Our spring blossom honey is produced at the beginning of the beekeeping year. At this time, fruit-tree blossom and the diverse flora of gardens and meadows shape the landscape around our apiaries in the Taunus. Many individual nectar sources come together in a balanced honey with a gentle, floral character.

Its comparatively high glucose content means that spring blossom honey naturally crystallises more quickly. This is not a sign of poor quality, but a typical characteristic of this honey and the reason for its pleasantly creamy texture.

Mild, creamy and versatile

With its subtle sweetness, spring blossom honey is especially good on toast or fresh bread, in plain yoghurt or with muesli. Its delicate aroma also works well in dressings and cold dishes.

Every harvest reflects its season: weather, flowering times and the local range of plants vary from year to year. Colour and flavour can therefore differ slightly from one harvest to the next.

How to store honey

Store honey in a dry, dark place at a stable room temperature. Keep the jar tightly sealed, as honey readily absorbs moisture and odours from its surroundings. Refrigeration is unnecessary and speeds up crystallisation.

Crystallised honey is completely natural. If you prefer a runnier consistency, slowly warm the jar in a lukewarm water bath. Avoid high temperatures and microwaves to preserve its flavour and natural properties.
